Wheatless Tabouli Salad

Recently, I made a tabouli-style salad with the main ingredients from my own backyard (oh, how I am going to miss summer!), omitting the wheat. 
2 Large Bunches of Parsley, washed and finely chopped
2 Large Red Tomatoes, diced
1 Large Yellow Tomato, diced
¼ cup Purple Onion, finely chopped
Juice of 1 Lemon
1 TBSP Dried Mint (fresh mint is great, if you have it on hand)
2 TBSP Olive Oil (right now, we are enjoying ZOE, Diva Select Koroneiki Greek EVOO)
Sea Salt & Fresh Ground Black Pepper to taste
Combine first 4 ingredients in large bowl.  Top with lemon juice, mint, olive oil, salt & pepper.  Stir well. Refrigerate for several hours to maximize flavors.
